Pumpkin – orange soup

Ingredients:

2  table spoons sunflower oil Majola or olive one
2 middle chopped onion
2 crushed cloves of garlic
900 g peeled  and cut into cubes pumpkin
1,5 l vegetable broth or chicken one
  finely grated zest and juice of 1 orange
3 table spoons fresh thyme
150 ml milk
  Salt and pepper
  bread with crust for soup

Preparation:

Heat up oil Majola in a big pot. Put onion and fry during 3-4 min. Add garlic, pumpkin and cook 2 min more, stirring often.

Pour in boiling broth; add zest, orange juice and 2 table spoons of thyme. Cook on small fire during 20 min, until pumpkin becomes soft.

In blender bring mixture to homogenous condition. Dress it according to your taste. Pour soup again in pot and add milk. Let the soup warm thoroughly during 2-3 min without bringing it to boil.

Before serve strew with the rest of thyme. Pour in warm plates and serve to soup fresh crunching bred.
